Tailgate Party!

It's football time in Tennessee!  But, no matter where you live or who your favorite team is, it's time to have those wonderful tailgate parties.  There's really no set menu for these meals from the back of your truck, van or car,  it's whatever you like goes. Here are just a few ideas that are real crowd pleasers and don't forget Uncle Bob's Chili, it always scores big with the fans.

Go Big Orange

Game Day Fiesta Dip

1 - 16oz. jar of Salsa

2 - 8oz. packages of Cream Cheese

Iceburg Lettuce

1 Tomato

Scallions

3 Cups shredded Cheddar Cheese

1 Can large Black Olives (pitted)

Combine Salsa and cream cheese in a bowl, mix well.  Pour into a 9 x 13" glass baking dish. Chop lettuce and lay on top of Salsa mixture, pat down with your hand.  Dice tomato and place on top of lettuce. pat down with your hand.  Chop some scallions (as much or as little as you like) and place on top of tomato, pat down with your hand.  Sprinkle cheddar cheese on top of all and again, pat down with your hand. Slice olives and place on top of cheese. Refrigerate for at least 2 hours or for best results, 12 hours. Serve with Tortilla Chips.

Touchdown Chicken Wings

2 lbs. Chicken Wings

1/4 Cup oil

1/2 Cup Ketchup

1/2 Cup Honey

1 tsp. Chili powder

1 tsp. Paprika

1 tsp. Salt

1/2 tsp Dry Mustard

1/4 tsp. Tabasco sauce or Cayenne Pepper

1 Can Green Chilies, drained

Put all ingredients except the Chicken wings in a blender or food processor and puree until well blended. Place wings in a zip lock bag, pour mixture over the wings, seal and place in refrigerator overnight or for at least a couple of hours. Wings may then be broiled, baked or grilled.

Bacon Cheddar Stuffed Burgers

1/4 lb. Bacon, cooked and crumbled

1 Cup shredded Cheddar Cheese

1 Tblsp. minced onion

1/3 Cup Ketchup

1 lb. Ground beef

4 Hamburger buns

Combine the first 4 ingredients, mix well and set aside.  Make 8 thin hamburger patties.  Place equal portions of the bacon mixture in the center of 4 patties.  Top with remaining patties and pinch the edges together tightly.  Grill or broil to desired doneness.  Serve on buns.

Football Field Dessert

2 Cups Cold Milk

1 small pkg. Chocolate flavored Instant Pudding mix

1 - 12 oz. Pound cake, cut into 1/2" cubes

1 1/2 Cups chopped Milk Chocolate candy bars

1 - 12 oz. container of Frozen Whipped topping, thawed

Green food coloring, if desired for decoration

Pour cold milk into bowl and add pudding mix.  Beat with wire whisk 2 minutes.  Line the bottom of a 12 x 8" glass baking dish with the cake cubes.  Sprinkle with the chopped candy bars.  Top with the pudding mixture.  Reserve 1 cup of the whipped topping and tint the remaining topping with the green food coloring if you want to make it look like a football field. Spread the green whipped topping over the pudding and refrigerate for 1 hour or until ready to serve.  Pipe the white whipped topping on the dessert to resemble yard lines.  Store leftover dessert in refrigerator.
