It's that time of year again for family and friends to gather, exchange gifts and celebrate the birth of the baby Jesus. One of the most important parts of these celebrations is the food and goodies that we prepare. My Kolacky's and Peanut Butter Kiss cookies are a great start for your holiday sweet treats but that's just the beginning. Here are some of my favorite holiday recipes that I hope you'll enjoy. And as usual , I've included some links to other great sites that have more recipes and holiday fun. Hope you and your families have a safe and happy holiday season.
Cornish Hens with Vegetables 4 Cornish game hens 8 small carrots 8 small new red potatoes 1/3 Cup melted butter or margarine 1 tsp. salt 1/2 tsp. crushed sage leaves 1/4 tsp. pepper 2 tsp. fresh minced garlic Heat oven to 375 degrees. Place hens, breast side up on rack in large roasting pan. Arrange carrots and potatoes around hens. In a small bowl stir together the remaining ingredients and spoon over the hens and vegetables. Cover and bake, basting occasionally, for 1 hour. Remove cover and continue baking for 30 to 45 minutes or until hens are fork tender.
Cornbread Stuffing 4 cups crumbled cornbread 2 cups (4 stalks) sliced celery 1/4 cup melted butter or margarine 1/4 cup chicken broth 8 slices crisply cooked bacon, crumbled (reserve drippings) 1 medium onion chopped 1 tsp. salt 1/4 tsp. pepper 3 Tblsp. reserved bacon drippings In a large bowl stir together all ingredients. Use to stuff a 12 to 14 lb. turkey or half the recipe to stuff a 4 to 5 lb. roasting chicken, duck, goose or 4 cornish game hens.
Country Ham Steak with Glazed Apples 3 Tblsp. butter or margarine 1/4 cup firmly packed brown sugar 2 Tblsp. Dijon mustard 2 cups cored, sliced (1/8") tart apples 1 lb. ham steak (1/2" thick) In a 10" skillet melt butter or margarine until sizzling, stir in brown sugar and mustard. Add apples. Cook over medium heat, stirring occasionally until apples are crisply tender, about 5 to 7 minutes. Place ham steak in the same skillet, arranging apples on ham steak. Cover and continue cooking until ham steak is heated through, about an additional 5 to 7 minutes.
Impossible Bacon Pie (Great for a holiday brunch served with a salad) 12 slices of bacon, crisply fried and crumbled 1 Cup shredded Swiss cheese 1/3 Cup chopped onion 2 Cups Milk 1 cup Bisquick© baking mix 4 eggs 1/4 tsp. salt 1/8 tsp. pepper Heat oven to 400 degrees. Lightly grease a 10" pie pan. Sprinkle bacon, cheese and onion in pie pan. Beat remaining ingredients until smooth, 15 seconds in a blender on high or 1 minute with hand beater. Pour mixture into pie pan. Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 to 40 minutes. Let stand 5 minutes before cutting. Refrigerate any remaining pie.
Creamy Eggnog 1/2 Cup powdered sugar 4 eggs 1/4 tsp. salt 1/2 tsp. vanilla 4 Cups whipping cream or milk Optional: Rum, Sweetened whipped cream and nutmeg In a blender combine powdered sugar, eggs, salt and vanilla. Cover and blend at high speed until well blended. In 2 quart saucepan place 2 cups of the whipping cream or milk. Cook over medium heat about 5 to 6 minutes. While blending at medium speed, slowly add the warmed whipping cream or milk to the egg mixture. Continue blending until frothy. In the same 2 quart saucepan stir together egg mixture and the remaining 2 cups of whipping cream or milk. Cook over medium heat, stirring occasionally for approximately 5 to 6 minutes. If desired, add 1 to 2 Tblsp. rum to each serving, top with sweetened whipped cream and nutmeg. Mixture can be stored in the refrigerator for 2 to 3 days.
